        <p>Chan, Leo<lb/>Born in  Macau and raised in Hong Kong, Professor Chef Leo Chan immigrated to Canada in 1966, where he pursued a BA in Political Science at York University in Toronto, Ontario. He then went on to explore a career in the hospitality and food sector through further education at Ryerson and the Cornell School of Hospitality.<lb/>Chef Chan has worked in various restaurants and hospitality companies. In particular, he has held senior management roles with Mandarin Restaurant and Sarki Japan Restaurant. In 1988 he co-founded the Cambridge Food &amp; Wine Society, a hospitality consulting firm with Professor Gian Paolo (J.P.) Michelini.<lb/>He also taught at both George Brown Hospitality Centre and Humber Polytechnic.</p>

Some of the menus contain handwritten annotations.</p>
