Chan, Leo
Born in Macau and raised in Hong Kong, Professor Chef Leo Chan immigrated to Canada in 1966, where he pursued a BA in Political Science at York University in Toronto, Ontario. He then went on to explore a career in the hospitality and food sector through further education at Ryerson and the Cornell School of Hospitality.
Chef Chan has worked in various restaurants and hospitality companies. In particular, he has held senior management roles with Mandarin Restaurant and Sarki Japan Restaurant. In 1988 he co-founded the Cambridge Food & Wine Society, a hospitality consulting firm with Professor Gian Paolo (J.P.) Michelini.
He also taught at both George Brown Hospitality Centre and Humber Polytechnic.
